Pancakes

The fastest lunchtime snack in our house has to be these pancakes. 

125g SR flour
1 egg
150ml milk
Feta cheese (about 75g) but this is not an exact science
A shake of frozen sweetcorn

Make batter with flour, egg and milk. 
Add crumbled cheese and sweetcorn (no need to defrost it).
Feta is pretty salty so I don't add salt to the recipe.
The mixture will be very thick because the sweetcorn is still frozen. Do not worry!
Put dollops into non stick frying pan, wiped round with oil.
Wait until bubbles appear on the surface and then flip them over.

The recipe also works with peas, but less well with other cheeses which melt rather than staying as separate lumps.
Eat hot or cold. They don't disintegrate and seem to survive packed lunch boxes.
Can be made with Gluten Free flour (Asda own brand is pretty good) but may need extra baking powder.
